Welcome to Espada

In Rio Grande do Sul, the southernmost part of Brazil, gauchos, or Southern Brazilian cowboys, roam the land herding cattle across the state’s vast pastures. These gauchos would pierce large pieces of choice cuts of beef, and slow roast them over open flamed pits, preserving the individual flavor of each cut, and producing the most succulent and tender of dishes.

Today in Brazil, the centuries old gaucho tradition is still alive, and in modern churrascarias, the gaucho servers parade the meat around the dining room, offering guests slices, fresh from the grill. From traditional cuts like filet mignon and NY Strip, to more obscure cuts like Fraldinha and Pichana, the Brazilian favorite, beef is the prime choice for many. But the pork loin and ribs, chicken legs, linguica sausage, bacon wrapped chicken breast, pineapple and lamb should not be overlooked.

These succulent meats are accompanied by a gourmet salad bar with fresh greens, prepared salads, sliced fruit, soup, bread, cheese, olives, mashed potatoes, fried plantains, black beans & rice done in the Brazilian tradition. Brought to the table is the famous Brazilian cheese bread. Vegetarians need not fear as the salad bar alone, for which there is a reasonably priced menu option, provides plenty to eat. They are also welcome to enjoy the meatless items that come off the grill.

Espada is not just Rochester’s only churrascaria, but is also Rochester’s first eco restaurant. Run entirely on renewable solar, wind and hydro energy, it is designed to have a small footprint. The chairs are constructed from Brazilian wood from an old ship, the columns are lined with indigenous reclaimed wood and recycled glass tiles, and our paper products are earth friendly. All our dairy products are from local Finger Lake farmers. Despite the higher cost of these items, we are committed to bringing you a wonderful dining experience without putting a strain on Mother Earth.

But at the center of it all is the meat. We’ve carefully tested and selected our thirteen cuts of meat, our salt and our charcoal, in the hopes that we can live up to not just our guest’s previous churrasco experiences, but also the expectations of the Brazilian community. We are here to provide the city of Rochester and the area with this increasingly popular form of dining, and we think you’ll love it!
